The tray features a corrugated wave profile with a 60 mm pitch and 30 mm wave height (the 6×3 designation), pressed from carbon steel and perforated throughout the surface.
This wave geometry lifts the dough off the base, allowing hot air to circulate freely beneath the product while perforations accelerate moisture release — the result is a crisper bottom crust and more uniform oven spring. The tray is available in two formats matched to the standard Belkras oven chamber: 660×660 mm and 660×900 mm, each with a 10 mm rim, making them direct drop-in replacements for EMB-series trolley ovens.
The Wave 6×3 sits in the middle of the company's perforated wave range, which spans the smaller 50×20 and larger 75×40 profiles, letting bakers choose the wave depth that best suits their bread variety.
