Description

Purpose, scope of application: The proofing cabinet is designed for proofing dough pieces of bakery products. MAINTAINS ITS SERVICEABILITY: ? During prolonged static tilting (without time limitation) in any direction up to ±15°. ? Rolling with an amplitude of 45° and a period of 7 to 9 seconds in any direction. ? When exposed to 98% relative humidity at an ambient temperature of 35°C. ? When exposed to ambient temperature for a prolonged period (without limitation) from 1°C to 45°C. ? After exposure to salt (sea) fog.

Distinctive features: ? Maintaining the set temperature and humidity in the proofing chamber through the operation of high-precision setters.

? Temperature and humidity uniformity at any point in the proofing chamber due to optimal airflow distribution and the steam humidification system. ? The proofing cabinet has a metal base (bottom) that insulates the dough pieces from low temperatures....
