Liquid Ice (binary ice) is a mixture of microscopic crystals and sea water - a unique cooling medium, which by its characteristics is much more effective than even a mixture of finely chopped ice and water. Since the crystals of liquid ice are incommensurably small, in principle there is no danger of damage to fish products both physically - liquid ice can not cut the fish, and can not arise thermal burns in fish products. Due to its excellent heat transfer, Liquid Ice cools faster and more efficiently. Consequently, fish cooled in Liquid Ice does not freeze. Liquid Ice completely envelops fish products, blocking the access of oxygen, it noticeably slows down the processes of decomposition of the internal structure of fish products and the growth of bacteria and slows down the mechanisms of destruction of the internal structure of fish products. Shelf life of chilled fish products increases up to 20 days.
