Vacuum-apparatuses are designed for cooking under vacuum caramel, toffee masses, condensed milk, as well as fillings, marmalade, jelly and recipe mixtures for various varieties of soft candies. The vacuum-apparatus is a cylindrical stainless steel body with conical lid and bottom. A heat-insulated steam jacket is welded on the body. Inside the vacuum-apparatus there is a stirring device driven by a gearmotor. Vacuum-apparatus is equipped with a hatch for internal inspection and maintenance, pressure gauge for measuring steam pressure in the jacket, safety valve on the steam supply line, vacuum gauge for measuring vacuum in the body, cargo safety valve designed to release steam at increased pressure inside the apparatus in case of vacuum pump failure.
