The food additive sodium acetic acid trihydric e262 (i) is used in food production as an acidity regulator, preservative, flavouring, stabiliser. Its functional duties include preservation of flavour and aroma characteristics, shape and texture, as well as improving the consistency of products. Sodium acetic acid is used to prevent "potato disease", which is provoked by spore-forming bacteria.
In fruit and vegetable preserves, it is designed to soften the excessively sharp taste of ethanoic acid, levelling the sharpness of the odour. With its participation it is often produced chips, breadcrumbs and similar products to make their taste and smell more pleasant, piquant, slightly vinegary. E262 can also be found in mayonnaise, bouillon cubes and freeze-dried foods (e.g.
in instant soups). Due to its low toxicity, it is believed that this food additive can be consumed by a healthy person together with food in unlimited amounts.
